What Is Chicken Scampi
Did you know that scampi is actually an Italian word for a mini lobster? The traditional recipe used to be made with mini lobsters that look like shrimp.

It then evolved to include shrimp. It’s usually served with a lot of garlic and butter in a white wine sauce and served on top of pasta.
Chicken scampi has the same basic ingredients and flavor, but it’s made with chicken breast instead of shrimp. Most chicken scampi recipes are made on top of Angel hair pasta.
Keto Chicken Scampi
In order to keep the carbs low, I made this recipe without any pasta. I maintained the flavor of traditional scampi.

I used a white cooking wine, but you can use any kind of dry white wine. Sauvignon Blanc will have the best flavor pairings with the lemon and garlic.
If you can, use a fresh lemon. The juice will have a bolder aroma and a sweeter flavor than jarred lemon juice and please use fresh garlic instead of jarred garlic.
It will also taste more pungent. You might have to use more jarred garlic to get the same results as fresh.
Easy Chicken Scampi
This entire recipe is ready in just 20 minutes! It will be faster if you slice the chicken really thinly.

The chicken needs to be fully cooked before you remove it from the skillet. The safest way to tell if your chicken is fully cooked is to take the internal temperature.
Chicken should be at least 165F before it is safe to eat.
Can you make chicken scampi with chicken thighs? Yes, you sure can!
As long as you cut the chicken into thin pieces, it’s perfectly fine to make this recipe with chicken thighs instead of chicken breasts.
What To Eat With Scampi
I made this meal without any pasta, so feel free to cook and add your favorite type of low-carb pasta. Maybe add your favorite zucchini noodles, spaghetti squash, or butternut squash noodles.

Start out your meal with a keto bacon ranch chopped salad. It’s full of hearty fiber from cauliflower and broccoli.
Keto cottage cheese flatbread will taste delicious with it too. And for something sweet, make a bowl of low-carb basil marinated berries with cottage cheese.

Ingredients
- Boneless Skinless Chicken Breasts
- Olive Oil
- Onion
- Dry White Cooking Wine
- Lemon
- Garlic
- Butter
- Parmesan Cheese
Directions

Add the oil to a skillet over medium high heat. Season the chicken with salt and pepper to taste, and add to the heated skillet. Sear the chicken on all sides until cooked through. Remove and set aside.
Discard all but a tablespoon of the grease from the skillet, and reduce the heat to medium. Stir in the onions, and saute until beginning to soften.

Pour in the white cooking wine and lemon juice, and simmer until the liquid is reduced by half.

Mix in the garlic and butter, and simmer until the butter has melted.

Add the parmesan to the skillet, and stir to combine.

Return the chicken to the skillet, and toss to coat in the sauce before serving.

- 2 tbsp Olive Oil
- 1/2 Onion chopped
- 1/2 cup Dry White Cooking Wine

- 4 tbsp Butter
- 1/2 cup Parmesan Cheese grated
Instructions
