1 1/2cupsAlmond Flour
3large Eggs
1tspVanilla
1/4cupHeavy Whipping Cream
1 1/2tspBaking Powder
1/2cupSwerve Granulated Sugar Substitute
1/4cupMelted Butter
1/4cupKeto-Friendly Chocolate Chips
1 1/2tbspUnsweetened Cocoa Powder
3dropsRed Food Coloring
Icing Glaze
1/3cupSwerve Confectioner's Sugar Substitute
1/2tspVanilla
Heavy Whipping Cream as needed
Instructions
Preheat the mini waffle iron.
Blend together the almond flour, eggs, heavy whipping cream, vanilla, baking powder, Swerve granulated sugar substitute, melted butter, chocolate chips, and cocoa powder.
Mix in as much food coloring as needed to get that deep red velvet appearance.
Add a layer of the batter to the waffle iron, and cook until done to your liking.
Remove the waffle, and continue to make waffles until all of the batter has been used.
Place the Swervec onfectioners sugar substitute and vanilla in a mixing bowl, and whisk in a little heavy whipping cream at a time until you have a thick glaze.
Drizzle the glaze over the prepared waffles and serve.
