Ingredients

Waffles

  • 1 1/2 cups Almond Flour
  • 3 large Eggs
  • 1 tsp Vanilla
  • 1/4 cup Heavy Whipping Cream
  • 1 1/2 tsp Baking Powder
  • 1/2 cup Swerve Granulated Sugar Substitute
  • 1/4 cup Melted Butter
  • 1/4 cup Keto-Friendly Chocolate Chips
  • 1 1/2 tbsp Unsweetened Cocoa Powder
  • 3 drops Red Food Coloring

Icing Glaze

  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Vanilla
  • Heavy Whipping Cream as needed

Instructions

  • Preheat the mini waffle iron.
  • Blend together the almond flour, eggs, heavy whipping cream, vanilla, baking powder, Swerve granulated sugar substitute, melted butter, chocolate chips, and cocoa powder.
  • Mix in as much food coloring as needed to get that deep red velvet appearance.
  • Add a layer of the batter to the waffle iron, and cook until done to your liking.
  • Remove the waffle, and continue to make waffles until all of the batter has been used.
  • Place the Swervec onfectioners sugar substitute and vanilla in a mixing bowl, and whisk in a little heavy whipping cream at a time until you have a thick glaze.
  • Drizzle the glaze over the prepared waffles and serve.
