Ingredients

Cake

  • 2 cups Almond Flour
  • 1 large Egg
  • 1 cup Zucchini grated and then squeezed of all excess liquid
  • 2 tbsp Melted Butter
  • 2/3 cup Almond Milk
  • 2/3 cup Swerve Brown Sugar Substitute
  • 2 tsp Baking Powder
  • 1 tsp Vanilla
  • 1 tsp Cinnamon

Icing

  • 4 ounces Cream Cheese softend
  • 1 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • Almond Milk as needed

Instructions

  1. Preheat the oven to 350 degrees.

  2. Blend together all of the cake ingredients in a mixing bowl until well combined.

  3. Place the mixture into a well greased 9x9 baking dish.

  4. Bake for 30-35 minutes, or until cooked through completely.

  5. Let the cake cool to room temperature.

  6. Beat together the icing ingredients until smooth and creamy.

  7. Spread the icing over the cooled cake and serve.
