So, if you have a bunch of garden zucchini that you need to cook up, then this recipe is perfect for you! This cake tastes just like a store-bought sheet cake.

It’s so moist, and the cinnamon flavors are popping! Plus, the cinnamon cream cheese frosting is the perfect topping.

You can use the frosting on so many other recipes, too. 

Cinnamon Brown Sugar Cake 

I love the combination of cinnamon and sugar in recipes! It reminds me of cinnamon french toast!

Keto Cinnamon Brown Sugar Zucchini Cake

It’s just an iconic duo. And it transforms a basic cake into something that everyone gobbles up! 

The cake is made with almond flour and almond milk. Remember to use almond flour, not almond meal.

If you use almond meal, the cake will taste grainy. And when you buy almond milk, get the plain, unsweetened variety.

Vanilla almond milk will change the flavor of the cake, and sweetened almond milk might kick you out of ketosis. 

Cinnamon Zucchini Cake 

Prevent the cake from being too soggy or moist. To do this, grate the zucchini and then put it in a cheesecloth and squeeze out as much of the excess liquid as you can. 

Shredded Zucchini

Another tip that will take your cake to the next level is to use salted butter. I didn’t use any salt in the cake batter. Salted butter will enhance all of the flavors. 

What To Eat With Cake

This is the perfect cake to serve at birthday parties or any party where you need to feed a lot of guests.

If you’re going to serve it at a party, then make some keto crispy cinnamon cream cheese roll ups. They taste like churro cheesecake.

Or you can just go ahead and make a keto cheesecake! It’s so easy and tastes amazing with the zucchini cake.

Add some keto-friendly ice cream on the side. It will taste delicious with the cream cheese filling in the cake.

How To Store Cake 

This cake is freezer-friendly. If you want to freeze it, place it in a freezer-safe container or wrap each piece of cake in aluminum foil and store it in the freezer for up to six months.

Cake: 

  • Almond Flour 
  • Egg
  • Zucchini 
  • Melted Butter
  • Almond Milk 
  • Swerve Brown Sugar Substitute 
  • Baking Powder 
  • Vanilla 
  • Cinnamon 

Icing: 

  • Cream Cheese 
  • Swerve Confectioner’s Sugar Substitute 
  • Vanilla
  • Cinnamon 
  • Almond Milk 

Directions 

Mixing cake batter ingredients

Preheat the oven to 350 degrees. Blend together all of the cake ingredients in a mixing bowl until well combined.

Place the mixture into a well greased 9×9 baking dish. Bake for 30-35 minutes, or until cooked through completely.

Cream Cheese

Beat together the icing ingredients until smooth and creamy.

Adding frosting to the cake

Spread the icing over the cooled cake and serve.

Ingredients
  

Cake

  • 2 cups Almond Flour
  • 1 large Egg
  • 1 cup Zucchini grated and then squeezed of all excess liquid
  • 2 tbsp Melted Butter
  • 2/3 cup Almond Milk
  • 2/3 cup Swerve Brown Sugar Substitute
  • 2 tsp Baking Powder
  • 1 tsp Vanilla
  • 1 tsp Cinnamon

Icing

  • 4 ounces Cream Cheese softend
  • 1 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • Almond Milk as needed

Instructions
 

  • Preheat the oven to 350 degrees.
