Ingredients

  • 6 Keto 8-inch Tortillas
  • 1 pound Shredded Chicken
  • 1/2 cup Bacon Pieces fully cooked
  • 2 tbsp Ranch Seasoning
  • 1/3 cup Chopped Green Onions plus additional for garnish
  • 2 cups Fiesta Blend Shredded Cheese divided
  • 8 ounces Cream Cheese softened
  • 1 cup Red Enchilada Sauce
  • 1/3 cup Heavy Whipping Cream

Instructions

  1. Preheat the oven to 350 degrees.

  2. Add the chicken, bacon, ranch seasoning, ⅓ cup green onions, cream cheese and ½ cup of the fiesta blend cheese to a mixing bowl, and stir until well combined.

  3. Spread a sixth of the filling into each tortilla. Fold the sides of the tortilla in, and tightly wrap the tortilla closed around the filling.

  4. Place the filled tortillas into a well greased 9x13 baking dish.

  5. Whisk together the red enchilada sauce and the heavy whipping cream in a bowl.

  6. Spoon the sauce over the tortillas.

  7. Sprinkle with the remaining fiesta blend cheese.

  8. Bake for 25 minutes.

  9. Garnish with green onions before serving.
