What Is Crack Chicken
I honestly can’t find the crack chicken origin story. But the name sure is accurate!
Crack chicken is pretty much a combination of chicken breasts, dry ranch dressing seasoning, cooked bacon, and cream cheese. From those three ingredients, people make a bunch of different variations (like these enchiladas!).
I think it’s called crack chicken because it is that addicting and delicious! Seriously, these enchiladas have a completely unique flavor.
I almost think they’re better than my keto chicken enchilada roll-ups...but those roll-ups are pretty good too.
Keto Crack Chicken
After making creamy skillet keto crack chicken, I wanted to make a lunch-version. Instead of something that you have to eat with a fork and knife, I wanted to make something you could eat in the middle of your busy day.
These enchiladas have the same incredible ingredients, but I wrapped them up in low-carb tortillas and then topped them with melted cheese and zesty enchilada sauce. It’s actually pretty surprising how well they go together.
Crack Chicken Enchiladas
I know it might sound a bit odd at first, but red enchilada sauce really tastes amazing with chicken, cream cheese, bacon, and ranch dressing! Try it once and you’ll never go back to regular enchiladas again.
The secret to keeping these enchiladas low-carb is to use a low-carb tortilla that isn’t made with corn or flour. Mission brand is my favorite because they taste just like a flour tortilla, but without all the carbs.
What To Eat With Enchiladas
I like to serve the enchiladas with some skillet keto garlic butter rosemary rolls. The buttery and herby flavors are perfect with the cream cheese and bacon.
You can also never go wrong with some cauliflower mash or a creamy green bean casserole. And since this is kind of a Tex Mex meal, make some fresh guacamole to go along with it.
Cheese-lovers will really enjoy keto cauliflower au gratin. It’s a fun twist on a classic German recipe and tastes amazing with this keto crack chicken enchilada recipe.
How To Store Enchiladas
Add these enchiladas to your meal prep but I recommend eating them within the first few days. As it sits in the fridge, the filling will soften the tortillas.
Store leftover enchiladas in an airtight food storage container for no longer than three days. This is also a freezer-friendly meal.
To do this, cook it like normal. Then, let it cool down to room temperature and place it in a freezer-safe food storage container.
Seal it tightly with plastic wrap and an airtight freezer-safe lid. Keep it in the freezer for up to six months.

Ingredients
- Tortillas
- Shredded Chicken
- Bacon Pieces
- Ranch Seasoning
- Chopped Green Onions
- Fiesta Blend Shredded Cheese
- Cream Cheese
- Red Enchilada Sauce
- Heavy Whipping Cream
Directions
Preheat the oven to 350 degrees. Add the chicken, bacon, ranch seasoning, ⅓ cup green onions, cream cheese and ½ cup of the fiesta blend cheese to a mixing bowl, and stir until well combined.
Spread a sixth of the filling into each tortilla. Fold the sides of the tortilla in, and tightly wrap the tortilla closed around the filling.
Place the filled tortillas into a well greased 9×13 baking dish.
Whisk together the red enchilada sauce and the heavy whipping cream in a bowl. Spoon the sauce over the tortillas.
Sprinkle with the remaining fiesta blend cheese.
Bake for 25 minutes.
Garnish with green onions before serving.

- 1 pound Shredded Chicken
- 1/2 cup Bacon Pieces fully cooked
- 2 tbsp Ranch Seasoning

- 8 ounces Cream Cheese softened
