Ingredients

Keto Cookie Crust

  • 1 1/2 cups Almond Flour
  • 2 tbsp Melted Butter
  • 1/4 cup Swerve Brown Sugar Substitute
  • 2 tbsp Almond Milk
  • 1 tsp Vanilla Extract

Magic Bars Toppings

  • 1 cup Pecans chopped
  • 1 cup Unsweetened Coconut Flakes
  • 1 cup Keto Chocolate Chips
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 2 tbsp Butter
  • 1/2 tsp Xanthan Gum
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsweetened Dried Cranberries

Instructions

  • Preheat the oven to 350 degrees, and grease a 9x9 baking dish well.
  • In a bowl, combine the crust ingredients until crumbly.
  • Press the crust mixture into the bottom of the baking dish.
  • Bake for 15 minutes, and allow to cool.
  • While the crust is baking, add the heavy whipping cream to a pot over medium heat.
  • Stir, and simmer until the cream thickens.
  • Remove from the heat, and stir in the Swerve, butter, vanilla extract and xanthan gum. Stir to combine well.
  • Layer the pecans, coconut, chocolate chips and cranberries over the cooled crust.
  • Pour the mixture in the pot over everything.
  • Bake for 20-25 minutes.
  • Let cool to room temperature, and chill for 2 hours in the fridge before serving.
