What Are Magic Bars
I’m not sure where magic bars originated, but they are usually made with a combination of chocolate, nuts, butterscotch, and coconut. There are lots of different variations and ways to make them, but shredded coconut flakes are common factor in all of them.
I wanted to make a holiday version, so I added some cranberries and pecans. Cranberries are a winter fruit with an extra-tart flavor. Pecans are also a winter ingredient, commonly used in fall pies like pecan pie.
Keto Magic Bars
There are 5 grams net carbs in each magic bar. This is a high-fat and high-protein breakfast choice. If you’re craving something salty and sweet at the same time, you’re going to really enjoy these magic bars.
The crust is made with almond flour, flavored with vanilla extract, and sweetened with Swerve brown sugar substitute.
Remember to always use almond flour – not almond meal. If you use almond meal, the bars will have a grainy texture.
Keto Cranberry Pecan Magic Bars
Pecans and cranberries go so perfectly together. I’ve used this combination together before in other recipes and it was such a hit that I deiced to use them in these dessert bars.
Cranberries and pecans taste incredible in chicken salad stuffed cucumbers. I also used this combination to make cranberry cheesecake (the crust is made from pecans).
Pecan Magic Bars
Both pecans and cranberries are a bit higher in carbs, so I suggest measuring them closely when you add them as toppings to the pecan magic bars.

Easy Keto Dessert
It only takes about 45 minutes to make easy keto desserts like cranberry pecan magic bars. After they cool off completely, store them in an airtight food storage container and keep them in the refrigerator for up to four days.
You can also freeze the bars to make them last longer. Store your cooked cranberry pecan magic bars in the freezer for up to six months.

Ingredients:
For the crust:
Almond flour
Melted butter
Swerve brown sugar substitute
Almond milk
Vanilla extract
For the topping:
Pecans
Unsweetened coconut flakes
Keto chocolate chips
Heavy whipping cream
Swerve confectioners sugar substitute
Butter
Xanthan gum
Vanilla extract
Unsweetened dried cranberries
Instructions:
Preheat the oven to 350 degrees, and grease a 9×9 baking dish well.
In a bowl, combine the crust ingredients until crumbly.
Press the crust mixture into the bottom of the baking dish.
Bake for 15 minutes, and allow to cool.
While the crust is baking, add the heavy whipping cream to a pot over medium heat. Stir, and simmer until the cream thickens.
Remove from the heat, and stir in the Swerve, butter, vanilla extract and xanthan gum. Stir to combine well.
Layer the pecans, coconut, chocolate chips and cranberries over the cooled crust.
Pour the mixture in the pot over everything.
Bake for 20-25 minutes.
Let cool to room temperature, and chill for 2 hours in the fridge before serving.
