Ingredients

  • 3 tbsp butter unsalted and divided
  • 2 slices bacon chopped
  • 10 ounces baby spinach leaves
  • 1/2 medium onion chopped
  • 4 ounces mushrooms sliced
  • 2 tsp garlic minced
  • 2 ounces cream cheese
  • 1/2 cup heavy whipping cream
  • 1/2 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/8 tsp nutmeg

Instructions

  • Heat 2 tablespoons of butter in a high sided saucepan over medium heat on the stove.
  • Add the mushrooms and onions to the saucepan with the butter, sauteing until they soften.
  • While the mushrooms and onions are cooking, add the other tablespoon of butter to a skillet over medium heat.
  • Place the spinach in the skillet, and cook until wilted. Squeeze out any extra liquid and set aside.
  • Cook the bacon, and set aside.
  • Add the minced garlic to the saucepan with the onions and mushrooms, and saute an additional 30 seconds.
  • Place the cream cheese into the saucepan, and stir until melted.
  • Pour the heavy whipping cream into the saucepan, and stir until the sauce thickens.
  • Mix in the mozzarella and parmesan cheeses until melted and well combined.
  • Stir the wilted spinach into the cream sauce, and add the bacon. Stir to combine well before serving.
