1poundShrimp peeled and deveined with tails off
1tbspOlive Oil
1tbspCajun Seasoning Divided
2tbspButter
1/2Onion chopped
1Red Bell Pepper chopped
1/2cupCelery chopped
2tspMinced Garlic
1cupHeavy Whipping Cream
1/3cupChicken Broth
Instructions
Heat the olive oil in a skillet over medium high heat.
Sprinkle all but 1 tsp of the cajun seasoning over the shrimp, and toss to coat well.
Cook the shrimp in the heated oil until seared well and cooked through. Remove, and set aside.
Add the butter to the skillet, and reduce the heat to medium.
Stir in the onions, peppers and celery. Saute until the vegetables have softened.
Mix in the garlic, and saute 30 seconds longer.
Pour in the chicken broth and heavy whipping cream.
Add the cajun seasoning, and stir to combine.
Simmer until the sauce has thickened.
Return the shrimp to the skillet, and toss to coat well in the sauce before serving.
