Ingredients

  • 4 Chicken Breast Cutlets cut thin
  • 1 tbsp Olive Oil
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 2 tsp Garlic minced
  • 1 1/2 tsp Italian Seasoning
  • 1 cup Canned coconut milk unsweetened
  • 4 cups Fresh Spinach

Instructions

  • Heat the oil in a large skillet over medium high heat.
  • Season the chicken with salt and pepper to taste and add to the heated skillet. Saute until seared on both sides and cooked through. Remove and set aside.
  • Add the butter to the skillet and reduce the heat to medium.
  • Saute the onion until softened.
  • Stir in the minced garlic and saute another 30 seconds.
  • Pour in the coconut milk.
  • Mix in the Italian seasoning and salt and pepper to taste.
  • Stir in the spinach and cook until wilted.
  • Add the chicken back to the skillet and toss to coat in the sauce before serving.
