Ingredients

  • 12.5 ounces Canned Chicken drained well
  • 1 1/2 cups Coleslaw mix
  • 1/3 cup Matchstick Carrots
  • 1/4 cup Green Onions chopped
  • 1/3 cup Plain Greek Yogurt
  • 1/2 tsp Sugar-Free Honey
  • 1 tsp Dijon Mustard
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 2 cups Shredded Mozzarella Cheese
  • Salt and Pepper to taste

Instructions

  • Preheat the oven to 425 degrees.
  • Arrange the cheese into 8 evenly sized circles of cheese on a parchment lined baking sheet, You may need to repeat this step depending on the size of your baking sheet.
  • Place the cheese into the oven, and cook for 8-10 minutes, or until the edges are browned and crispy.
  • In a mixing bowl, combine the remaining ingredients.
  • Remove the cheese from the oven, and allow to cool for 2 minutes
  • Place a layer of the chicken mixture down the center of each circle.
  • Carefully roll the cheese closed over the filling.
  • Allow the rollups to cool and the cheese to crisp up before serving.
