Coleslaw Chicken Salad
I might have come up with this recipe when I couldn’t decide between making coleslaw or chicken salad for lunch. All I did was combine my favorite slaw with chicken salad!
But then I wanted to make it easy to eat (without a fork). So, I wrapped it all up in a crispy cheese wrap.
There are only 3 grams net carbs in each serving! This slaw chicken salad roll ups recipe is also slightly-sweet, too!
I added a bit of keto honey mustard sauce (all homemade, of course) to the chicken salad. When it’s all combined and wrapped up, it’s fun to eat (and full of sweet and savory flavor).
Chicken Salad Roll Ups
The easiest way to make the chicken salad for the roll-ups is to open some canned chicken! If you don’t like canned chicken, then grab a rotisserie chicken from the store.
This is also a great way to use up leftover cooked chicken (if you have any in the fridge). Will chicken salad taste good with sliced deli chicken? Yes, it sure will!
Another way to save yourself time is to grab a bag of coleslaw mix from the store and add a handful of matchstick carrots. No chopping needed!
If you want to chop everything fresh, go ahead. You’ll need to combine some green and red cabbage with carrots.
For fun, you could even replace the added matchstick carrots with some bean sprouts (they’re really good for you).
Baked Cheese Wraps
The baked cheese wraps only take about 10 minutes to make in the oven. But if you want to save time, you could use keto street taco sized tortillas instead.
I suggest pan frying them before wrapping them up so they get deliciously crispy.
Can you make cheese wraps in the air fryer? No, I don’t recommend trying this.
As the air fryer blows the hot air around, it could make a bit of a mess with the shredded cheese. It’s better to use either a toaster oven or a conventional oven.
Crunchy Chicken Salad
This is a fantastic recipe to add to your weekly meal prep! But I suggest storing the filling in a container and making the cheese wraps fresh.
If they sit in the fridge for too long, the cheese wraps could get soggy from the coleslaw filling.
Store your roll-ups in an airtight container and keep them refrigerated for up to three days. I also recommend eating them cold.
The slaw chicken salad won’t taste very good when you heat it up.
What To Eat With Roll Ups
The coleslaw chicken salad roll-ups are so filling that I like to grab a few of them and eat them for lunch with just some cucumbers and ranch dressing on the side. If you’re feeling really hungry (or you want to eat them for dinner) then make a bowl of keto turmeric zucchini soup with the roll-ups.

Ingredients:
- Can chicken drained well
- Coleslaw mix
- Matchstick carrots
- Green onions chopped
- Plain Greek yogurt
- Sugar free honey
- Dijon mustard
- Onion powder
- Garlic powder
- Shredded mozzarella cheese
- Salt and pepper to taste
Instructions:
Preheat the oven to 425 degrees. Arrange the cheese into 8 evenly sized circles of cheese on a parchment lined baking sheet, You may need to repeat this step depending on the size of your baking sheet.
Place the cheese into the oven, and cook for 8-10 minutes, or until the edges are browned and crispy.
In a mixing bowl, combine the remaining ingredients. Remove the cheese from the oven, and allow to cool for 2 minutes.
Place a layer of the chicken mixture down the center of each circle. Carefully roll the cheese closed over the filling.
Allow the roll ups to cool and the cheese to crisp up before serving.
