Ingredients

Roll-Ups

  • 2 cups Shredded Swiss Cheese
  • 1/2 pound Sliced Corned Beef Deli Meat
  • 1 cup Sauerkraut

Keto Russian Dressing

  • 1/4 cup Mayonnaise
  • 1 tsp Worcestershire Sauce
  • 1 1/2 tbsp Sugar-Free Ketchup
  • 2 tsp Swerve Confectioner's Sugar Substitute
  • 1 tbsp Horseradish Sauce
  • 1 pinch Paprika

Instructions

  1. Preheat the oven to 400 degrees.

  2. Arrange the cheese into 8 circles on a parchment lined baking sheet. You may need to use two separate baking sheets.

  3. Bake for 6-8 minutes until the edges of the cheese circles are starting to brown and crisp up.

  4. Stir together the dressing ingredients while the cheese is baking.

  5. Remove the cheese circles from the oven and let cool for 1 minute.

  6. Top each circle with slices of the corned beef, some sauerkraut and a drizzle of the dressing.

  7. Quickly fold the cheese circles up over the filling before they have hardened and cooled down.

  8. Allow the rollups to cool and crisp up before serving.
