What Is A Reuben
A traditional Reuben sandwich is a grilled sandwich that is filled with corned beef, swiss cheese, sauerkraut, and Russian dressing. Stories say that a chef from Omaha, Nebraska, created the first one, and it stuck!
A grilled sandwich isn’t normally keto-friendly. If you wanted to, you could make it with some keto-friendly bread but I went a step further and used cheese wraps instead of bread.
The result is a lunch that only has 2 grams net carbs in each roll-up.
Keto Reuben
The idea behind these roll-ups is pretty simple. I filled cheese wraps with beef and sauerkraut, and then dipped them into low-carb Russian dressing.
I’m such a fan of the combination of roast beef and sauerkraut that I’ve made quite a few recipes with them. And if you love these flavors together too, then you might like either keto reuben soup or keto reuben dip.
Another one of my favorite ways to make a reuben on keto is to use chaffles as the bread. In fact, my low-carb Reuben sandwich tastes a lot like a classic reuben.
Reuben Roll-Ups
Even if you’re not exactly in the mood to make and bake cheese wraps, save this recipe so you have the keto Russian dressing ingredients. The horseradish gives it a fantastic kick!
You can use this dip in other things, too. Use it as a dip for keto-friendly chicken fingers, as a sauce for burgers, or spread it on your low-carb sandwiches.

What To Eat With Reubens
I like to eat the roll-ups for lunch. They are ready in less than 10 minutes.
If you’re still hungry, serve them with a side of cheesy keto garlic bread. These crispy roll-ups will also taste good with a bowl of keto Olive Garden salad.
It’s not just tasty, it’s good for you too. And for more protein, add some keto ranch popcorn chicken to the table.
How To Store Roll-Ups
These roll-ups taste the best when they are hot and fresh out of the oven. The longer they sit in the refrigerator, the softer the cheese wraps will become.
Store leftovers in an airtight food storage container in the refrigerator for up to three days.

Ingredients
Roll-Ups
- Swiss Cheese
- Sliced Corned Deli Meat
- Sauerkraut
Keto Russian Dressing
- Mayonnaise
- Worcestershire Sauce
- Sugar-Free Ketchup
- Swerve Confectioner’s Sugar Substitute
- Horseradish
- Paprika
Directions
Preheat the oven to 400 degrees. Arrange the cheese into 8 circles on a parchment lined baking sheet. You may need to use two separate baking sheets.
Bake for 6-8 minutes until the edges of the cheese circles are starting to brown and crisp up.
Stir together the dressing ingredients while the cheese is baking.
Remove the cheese circles from the oven and let cool for 1 minute. Top each circle with slices of the corned beef, some sauerkraut and a drizzle of the dressing.
Quickly fold the cheese circles up over the filling before they have hardened and cooled down.
Allow the roll ups to cool and crisp up before serving.
