Ingredients

  • 3 pounds Pork Loin Roast
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Pepper to taste
  • 6 ounces Fresh Cranberries
  • 1/4 cup Water
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Orange Extract
  • 2 tbsp Olive Oil

Instructions

  • Heat the olive oil in a skillet over medium high heat.
  • Season the pork roast with the garlic powder, onion powder and salt and pepper to taste.
  • Sear the pork roast on all sides.
  • Add the pork roast to the bottom of the Crockpot.
  • Place the cranberries, water and Swerve into a pot over medium heat.
  • Simmer until the cranberries begin to break open and the mixture thickens.
  • Remove from the heat and stir in the orange extract.
  • Spoon the cranberry mixture over the pork roast.
  • Cover and cook on low for 6 hours.
