Keto Crockpot Cranberry Pork Loin Roast

The tart cranberry flavors are the perfect thing to use with pork loin! Keto slow cooker cranberry pork loin is a surprising meal. It’s a fun and different entree for your holiday meals.

Cranberry Pork Loin 

Cranberry is a very seasonal winter ingredient. I’ve used it in a bunch of other low-carb recipes before, like cranberry cheesecake and keto cranberry brie flatbread.

Even though cranberries themselves aren’t considered a keto-friendly ingredient, you can use them in low-carb recipes. It all depends on how many you use! 

The bright red colors of the cranberries make them a perfect fit for your holiday meals. If you love cranberry sauce, then you’ll really enjoy all the flavors that the cranberries infuse into the lean pork loin. 

Keto Pork Loin 

The secret to a juicy and tender pork loin is to cook it slowly over low heat. That’s why I love using my slow cooker! It’s the easiest way to cook pork loin. 

Keto Crockpot Cranberry Pork Loin Roast

If you’re looking for a different entree for your holiday meal, then consider either pork or chicken! My keto cranberry rosemary chicken skillet is really easy and looks so fancy that you’ll be proud to serve it. 

 

One of the most surprising things about this recipe is that there are just 2 grams net carbs in each serving! It’s the perfect entree to make for dinner.

Everyone will love how it tastes (and as it cooks, it fills your kitchen with the best aromas). 

Slow Cooker Pork Loin 

I suggest using fresh cranberries. As they cook, the flavors will infuse into the meat. You can’t beat that flavor.

Can you use tenderloins instead of a pork loin? Yes, you sure can! I used about 3 pounds of meat in this recipe, so use the same amount in pork tenderloins.

They might cook quicker since they are smaller, so keep an eye on them. 

What To Eat With Pork Loin 

This juicy cranberry pork loin will make the tastiest dinner ever! Add some cheesy cauliflower bread sticks to the side, along with some bacon and broccoli salad.

You can also add some roasted asparagus and keto garlic knots to the table. If that’s not enough, make the copycat Olive Garden salad, too.

If you’d like something sweeter, make the cucumber and strawberry salad. I have also served pork loin with zucchini and squash, but they’d also taste great alongside these Easy Sauteed Mushrooms!

How To Store Cooked Pork 

This is the perfect thing to add to your meal prep! Store the cooked pork loin in an airtight food storage container and keep it in the refrigerator for up to three days.

If you want to use it in your meal prep, I suggest splitting it up into smaller containers. That way, you just have to grab one, heat it up, and lunch is ready. It saves you so much time (which keeps you on the keto diet).

Ingredients

  • Pork Loin Roast 
  • Garlic Powder 
  • Onion Powder
  • Salt and Pepper
  • Fresh Cranberries 
  • Water
  • Swerve Confectioner’s Sugar Substitute 
  • Orange Extract
  • Olive Oil 

Directions 

A seared pork loin roast.

Heat the olive oil in a skillet over medium high heat. Season the pork roast with the garlic powder, onion powder and salt and pepper to
taste.

Sear the pork roast on all sides.

Add the pork roast to the bottom of the Crockpot.

Simmering fresh cranberries

Place the cranberries, water and Swerve into a pot over medium heat. Simmer until the cranberries begin to break open and the mixture thickens.

Adding water to cranberry sauce.

Remove from the heat and stir in the orange extract.

  • 1 tsp Onion Powder
  • Salt and Pepper to taste

  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Orange Extract
  • 2 tbsp Olive Oil
