1cupCherry Tomatoes halved
Oil and Vinegar Dressing

Instructions
Cook the cauliflower rice to al dente, and then drain very well.
Place the cauliflower rice, cucumber, tomatoes and lemon juice in a bowl, and stir to combine.
In a small bowl, whisk together the oil, vinegar and salt and pepper to taste.
Pour the vinaigrette over the mixture, and toss to combine well.
Garnish with parsley before serving.
