Ingredients

  • 3 cups Cauliflower Rice
  • 1 cup Cucumber diced
  • 1 cup Cherry Tomatoes halved

Oil and Vinegar Dressing

  • 1 splash Lemon Juice
  • 3 tbsp Olive Oil
  • 1.5 tbsp Red Wine Vinegar
  • ` Parsley for garnish

Instructions

  • Cook the cauliflower rice to al dente, and then drain very well.
  • Place the cauliflower rice, cucumber, tomatoes and lemon juice in a bowl, and stir to combine.
  • In a small bowl, whisk together the oil, vinegar and salt and pepper to taste.
  • Pour the vinaigrette over the mixture, and toss to combine well.
  • Garnish with parsley before serving.
