In a bowl mix together the peanut butter, 2 Tbsp soy sauce, 1 tsp minced garlic, the olive oil with red pepper flakes, sweetener and chicken broth. Whisk to combine well.
Place ground chicken and sesame oil in a skillet over medium high heat, and saute until almost completely browned.
Add the minced garlic, soy sauce, ginger paste, rice vinegar and pepper to taste to the skillet, and stir to combine.
Put bok choy into the skillet, and continue to saute until the meat is completely cooked through, and the bok choy has wilted.
Stir in the miracle noodles.
Pour the sauce over the mixture, and saute until thickened.
Garnish with green onions and chopped peanuts before serving.
