What Are Dan Dan Noodles
Also commonly called dandanmian, they translate to “carrying pole noodles.” This is a popular Chinese recipe. The sauce is usually spicy and served with some sort of pork and topped with scallions.
I took this classic Chinese recipe and made it low-carb. It tastes so much like the original recipe that you’ll swear it is from a restaurant. I like to make this recipe when I am craving takeout. This is a simple 30-minute recipe that cooks in one skillet.
Are Chinese Noodles Keto-Friendly
Typical Chinese noodles are not usually keto-friendly. They are usually made with wheat flour or rice flour, then they are usually coated in a sweet sauce made with either sugar or honey.
I wanted to recreate the same flavors without the carbs. As they say, the secret is in the sauce! This sauce has a strong peanut flavor, thanks to the natural peanut butter and chopped peanuts. Then I sweetened it with a granulated sugar substitute and I included a bit of heat with the help of red pepper flakes.
If you want to give it even more heat, I suggest adding a bit of sriracha to it too.
Keto Dan Dan Noodles
My favorite type of low-carb noodles for this recipe is Miracle Noodles. They have the perfect flavor and texture.
If you don’t have Miracle Noodles, you can use either Palmini noodles or even zucchini noodles. Zoodles won’t have the same texture, but they can still work in a pinch.
Miracle Noodles are shirataki noodles that don’t have any net carbs. They are perfect for anyone on the ketogenic diet.
What To Serve With Dan Dan Noodles
These dan dan noodles taste delicious with any low-carb Chinese side dishes that you make.
Keto naked wonton soup is the perfect way to start out a low-carb Chinese meal. It has a lot of the same flavors. Or use bok choy twice, in this recipe and with some bok choy stir fry and soy sauce eggs. They are delicious together.
You really can’t go wrong with bang bang cauliflower. It has a bit of a kick and is really high in fiber and nutrition.
Chinese Food Meal Prep
This recipe is perfect for your meal prep this week. Follow the directions and then store it in an airtight container in the refrigerator for up to 3 days. When you are ready to reheat it, just put it in a skillet again or heat it up in the microwave.
This dish might solidify a bit in the refrigerator, but when you heat it back up, it will all melt again.

Ingredients:
Ground chicken
Miracle noodles
Minced garlic
Soy sauce
Ginger paste
Rice vinegar
Sesame oil
Pepper
Bok choy greens
For the sauce:
Natural peanut butter
Soy sauce
Minced garlic
Olive oil with Red pepper flakes to taste added to it
Granulated sweetener of choice
Chicken broth
Green onions
Peanuts
Instructions:
In a bowl, mix together the peanut butter, 2 Tbsp soy sauce, 1 tsp minced garlic, the olive oil with red pepper flakes, sweetener and chicken broth. Whisk to combine well.
Place ground chicken and sesame oil in a skillet over medium high heat, and saute until almost completely browned.
Add minced garlic, soy sauce, ginger paste, rice vinegar and pepper to taste to the skillet, and stir to combine.
Add the bok choy into the skillet, and continue to saute until meat is completely cooked through, and the bok choy has wilted.
Stir in noodles and pour the sauce over the mixture, and saute until thickened.
Garnish with green onions and chopped peanuts before serving.

- 1 pound Ground Chicken
- 1 package Miracle Noodles rinsed and drained
- 2 tsp Minced Garlic
- 1 tbsp Soy Sauce
- 2 tsp Ginger Paste
- 1 tbsp Rice Vinegar
- 1 tsp Sesame Oil
- 2 cups `Bok Choy chopped
Sauce
- 2 tbsp Natural Peanut Butter
- 2 tbsp Soy Sauce
- 1 tsp Minced Garlic
- 1 tbsp Olive Oil with Red Pepper Flakes
- 2 tsp Granulated Sweetener of Choice
- 1/4 cup Chicken Broth
- 1/4 cup Chopped Green Onions
- 2 tbsp Chopped Peanuts
