Finally, a cauliflower recipe that doesn't taste like cauliflower! This dill pickle cauliflower salad also has creamy ranch flavors, too.

Ingredients

  • 1 large head of cauliflower chopped into bite sized pieces
  • 1 Celery Stalk Chopped
  • 2 Green Onions Sliced
  • 1/4 cup Red Onion chopped
  • 4 slices Bacon cooked and crumbled
  • 2 Hard Boiled Eggs chopped
  • 1/3 cup Dill Pickles chopped
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 1 tbsp Dijon Mustard
  • 1 tbsp Fresh Dill
  • 1 tbsp Keto Ranch Seasoning
  • Salt and Pepper to taste

Instructions

  • Boil cauliflower in a pot of water for 4 minutes. Drain and set aside to cool.
  • In a large bowl, combine cauliflower, celery, green onions, red onion and hard boiled eggs.
  • Add mayo, sour cream, dijon, fresh dill and keto ranch seasoning. Stir well.
  • Fold in the crumbled bacon and chopped pickles.
  • Garnish with additional fresh dill and green onions, if desired.
  • Add salt & pepper to taste.
  • ENJOY!
