Ingredients

  • 1/2 pint Cherry Tomatoes
  • 4 ounces Feta Cheese
  • 3 tbsp Olive Oil separated
  • 1 tsp Garlic minced
  • 1/4 tsp Basil dried
  • 1/4 tsp Oregano dried
  • 2 cups Zucchini Noodles
  • 3 Fresh Basil Leaves for garnish

Instructions

  • Preheat the oven to 400 degrees.
  • Place 2 tablespoons of olive oil in the bottom of a loaf pan or other small casserole dish.
  • Add the cherry tomatoes to the dish and leave a circle open in the center.
  • Pour the feta into the center of the casserole dish in the middle of the tomatoes.
  • Sprinkle the oregano and dried basil over the ingredients and top with salt and pepper to taste.
  • Bake for 30 minutes.
  • While the mixture is baking, saute the zucchini noodles in a skillet with the remaining tablespoon of olive oil until done to your liking.
  • Remove from the oven, crush the tomatoes a bit, add the minced garlic and stir a bit to combine well.
  • Toss the zucchini noodles into the dish, and stir to combine.
  • Garnish with fresh basil leaves and serve.
