This keto feta baked pasta with tomatoes is zesty and the perfect dinner for two. This is a low-carb version of the viral TikTok recipe.

If you watch TikTok or Instagram stories, chances are you have seen videos of people putting a block of cheese in a dish with some tomatoes and making a scrumptious pasta out of it. This recipe idea when just about as viral as hot cocoa bombs did.

When I first saw this recipe, I knew I had to find a way to make it fit into my keto lifestyle. I couldn’t turn away from the roasted tomatoes and the melted feta cheese. It all looked so easy and so incredibly delicious.

Low Carb Version Of Tomato Feta

Most people will make the tomato and feta combination in the oven and then pour it over some pasta and eat it that way.

Keto Feta Baked Pasta With Tomatoes

As you know, pasta has way too many carbs in it, so I replaced them. Instead of traditional wheat-based pasta, I used zucchini noodles. 

The zucchini noodles might have a slightly different texture than flour-based noodles, but the entire recipe still has the rich and robust flavors as the viral sensation. 

Keto Dinner For Two 

If you live alone or just want to make dinner for yourself and your closest friend, this is the perfect recipe. Everything is perfectly portioned for two people.

Another benefit of these portions? Small portions keep the carb amounts lower. Tomatoes have lots of natural sugars in them. Eating too many of them – even though they are really healthy for you – could increase your macros too much.

Not only is this a light and flavorful meal, but every single ingredient is really good for you too! 

Did you know that tomatoes have lots of lycopene in them? It’s an antioxidant that is linked to a lower risk for heart disease and cancer. Plus, tomatoes are high in vitamin C and potassium too.

Feta cheese is also really nutritious. It’s high in calcium for strong bones, has lots of natural protein in it, and has lots of vitamin B12 for more energy. 

If you use zucchini noodles, they are known to help lower blood sugar and can even strengthen your vision. They are also naturally low in carbs, so they are a fantastic noodle substitute. 

If you use fresh herbs, they can provide health benefits too. (The fresher the herbs, the more nutrition they have.) For example, garlic is known to reduce blood pressure and fight the common cold.

Basil has lots of vitamins A and K, and oregano has phytonutrients that fight infections. 

Trendy TikTok Recipe

The original TikTok recipe shows people baking the tomatoes in the oven with a block of feta cheese. Then, they mix it together and toss this sauce over noodles.

I had a difficult time finding a block of feta cheese, so I just used crumbled feta instead. It worked just as well as a block of cheese would have. 

Another substitute for pasta is spaghetti squash. Or, you can forgo the entire pasta idea entirely and just toss the tomato and cheese sauce on top of steamed or roasted cauliflower. 

Save yourself time making zoodles and either use a bag of steamable zoodles from the freezer section or just cut a fresh zucchini in half and roast them for a few minutes in the oven.

Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 2 
Net Carbs: 6 net carbs per serving

Ingredients:

Cherry tomatoes
Feta cheese
Olive oil 
Garlic
Basil
Oregano
Salt and pepper
Zucchini noodles
Basil leaves 

Instructions:

1. Preheat the oven to 400 degrees.


2. Place 2 tablespoons of olive oil in the bottom of a loaf pan or other small casserole dish.


3. Add the cherry tomatoes to the dish and leave a circle open in the center.


4. Pour the feta into the center of the casserole dish in the middle of the tomatoes.


5. Sprinkle the oregano and dried basil over the ingredients and top with salt and pepper to taste.


6. Bake for 30 minutes.


7. While the mixture is baking, saute the zucchini noodles in a skillet with the remaining tablespoon of olive oil until done to your liking.


8. Remove from the oven, crush the tomatoes a bit, add the minced garlic and stir a bit to combine well.

9. Toss the zucchini noodles into the dish, and stir to combine.
10. Garnish with fresh basil leaves and serve.

  • 3 tbsp Olive Oil separated
  • 1 tsp Garlic minced
  • 1/4 tsp Basil dried
