Instructions
In a shallow bowl, beat together the egg and heavy whipping cream.
Combine the pork rind crumbs, parmesan cheese, almond flour, paprika, garlic powder, onion powder and salt and pepper to taste in a mixing bowl.
Dip the chicken into the egg mixture, and then coat in the crumb mixture.
Place the chicken onto a parchment lined baking sheet, and chill for 30 minutes before frying.
Heat several inches of oil in a deep sided skillet over medium high heat on the stove.
Cook the chicken in the oil once it has reached about 350 degrees for 10 minutes on one side, and then 6-8 on the other. The chicken should be golden brown and cooked through completely.
