This recipe is everything you love about fried chicken – crispy and salty coating with juicy chicken underneath. Except it’s different than you might expect. It’s gluten-free and keto-friendly. In fact, each serving only has 3 grams net carbs.
Even better, this is a kid-approved recipe! My kids love grabbing the chicken legs and demolishing them. They can’t even tell that they are gluten-free and low-carb!
There is one very important step that I want to point out. Don’t skip the chill time. After you coat the chicken pieces with the egg mixture and the pork rind breading, place them on a parchment-lined baking sheet and let it chill in the refrigerator for at least 30 minutes.
This marinating time is essential. It traps the chicken juices within the coating and solidifies the coating so it crisps up better when you cook the chicken.
Keto Fried Chicken Air Fryer
If you aren’t a fan of using a deep-fryer or frying chicken in a skillet, you can make keto fried chicken in your air fryer too! Here’s how to do just that.
Line your air fryer basket with aluminum foil and then place the breaded chicken pieces in the basket in a single layer. Air fry the chicken at 400F for about 25 minutes. Turn them over halfway through.
Check the internal temperature of the chicken to verify they are cooked entirely. They should be 165F.
Pork Rind Fried Chicken
The combination of almond flour and pork rinds are pure perfection! Use unflavored pork rinds, never any flavor that has added sugar. Chop or smash the pork rinds until they become small crumbs. The smaller the pork rind crumbs, the better.
If you want the fried chicken to have a bit of spicy kick, add some red pepper flakes and cayenne pepper to the breading.

Bone in skin on chicken
Large eggs
Heavy whipping cream
Paprika
Onion powder
Garlic powder
Almond flour
Pork rind crumbs
Parmesan cheese grated
Salt and pepper
Oil for frying
Instructions:
In a shallow bowl, beat together the egg and heavy whipping cream.
Combine the pork rind crumbs, parmesan cheese, almond flour, paprika, garlic powder, onion powder and salt and pepper to taste in a mixing bowl.
Dip the chicken into the egg mixture, and then coat in the crumb mixture.
Place the chicken onto a parchment lined baking sheet, and chill for 30 minutes before frying.
Heat several inches of oil in a deep sided skillet over medium high heat on the stove.
Cook the chicken in the oil once it has reached about 350 degrees for 10 minutes on one side, and then 6-8 on the other.
The chicken should be golden brown and cooked through completely.
