Keto Gingerbread

  • 1 1/2 cups Almond Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 tsp Baking Powder
  • 3/4 cup Brown Sugar Substitute
  • 1/2 cup Butter softened
  • 1 Egg

Keto Cinnamon Cream Cheese Frosting

  • 1 tsp Vanilla
  • 1 1/2 tsp Cinnamon

Instructions

  • Preheat the oven to 350 degrees F.
  • In a small bowl, whisk together almond flour, baking soda, baking powder and salt. Set aside.
  • In a separate bowl, mix together butter, sugar and vanilla.
  • Add the egg. Mix well.
  • Gradually mix in dry ingredients, including cinnamon, nutmeg and ginger.
  • Spread dough on a prepared baking sheet*. Bake for approximately 25 - 30 minutes. Allow cookies to cool completely in the pan, before adding frosting.
  • To create frosting, simply mix together all ingredients until fluffy. Spread over cooled cookie bars. Slice and enjoy!

Notes

I placed my tray in the refrigerator for 30 minutes before slicing to help everything set together. Not necessary though.
You can also bake these in a baking pan if you would like thicker cookie bars. Cooking time may increase depending on how deep your pan is.
