Keto Gingerbread Bars
If you are looking for a really easy holiday dessert, then this recipe is for you! It tastes just like a classic gingerbread cookie, but it is cut up into bite-sized bars. Then, these bars are topped with the most amazing cream cheese frosting.
I love to serve these at holiday dinners or parties. Everyone eats them up! As they bake, your stomach will rumble. That combination of spices – cinnamon, nutmeg, and ginger – smells like just like Christmas! Sometimes I like to bake a batch of these just to get my kitchen to smell like Christmas.
Low-Carb Gingerbread Cookies
When you make cookie bars, you are basically saving yourself the “cookie” step. Just place the cookie dough in the bottom of a baking dish and bake it!
If you have more time, you can make gingerbread cookies out of this recipe too. Roll them out and use a cookie cutter. The baking time will be about the same time but check on them after about 20 minutes so they don’t burn.
To make them into bars, either spread them out on your favorite cookie sheet or place them in a casserole baking dish. Just remember that the thicker the cookie dough is, the longer it will take for them to bake.
You will know they are fully baked when you insert a toothpick into the middle and it comes out clean.
Keto Gingerbread Recipe
I think the sugar-free cream cheese spread is the best thing about these bars! Before you frost the bars, let them cool down completely. Place them in the refrigerator or put them outside to let them cool down. If the bars are too hot, it will melt the frosting into what looks more like a glaze.
The cream cheese spread will have a soft consistency, just like frosting. If you want to make it easier to slice, I suggest putting the tray of frosted bars in the refrigerator for about 30 minutes. This will harden the cream cheese spread a bit, making it a lot easier to cut into bars.
Recipe For Low-Carb Gingerbread
Since these gingerbread bars have a cream cheese spread, I suggest storing them in an airtight container and keeping them in the refrigerator for up to 3 days. Try to use a container that has a lid. If you seal it with plastic wrap or aluminum foil, keep the wrap off of the top of the cream cheese spread so that it doesn’t squish it and lift the spread off of the bars.
You can also cut the gingerbread up into bars without the cream cheese spread and add them to a homemade cookie tin. Without the frosting, they will stay fresh at room temperature for up to a week.
Keto Gingerbread
These bars are a lot of fun to decorate with kids too! Instead of adding the cream cheese spread, use cookie cutters to cut out different shapes. Then, let your kids pipe their own frosting onto their bar. You can also let them add their own sugar-free sprinkles on top.
Add sugar eyes or use chocolate chips as the eyes.

Almond flour
Baking soda
Salt
Baking powder
Brown sugar substitute
Butter
Eggs
Vanilla
Cinnamon

Cinnamon Cream Cheese Frosting:
Cream cheese
Powdered sugar substitute
Vanilla
Cinnamon
INSTRUCTIONS:
1. Preheat the oven to 350 degrees F.
2. In a small bowl, whisk together almond flour, baking soda, baking powder and salt. Set aside.
3. In a separate bowl, mix together softened butter, sugar and vanilla.
4. Add eggs. Mix well.
5. Gradually mix in dry ingredients, including cinnamon, nutmeg and ginger.
6. Spread dough on a prepared baking sheet*. Bake for approximately 25 – 30 minutes. Allow to cool completely in the pan, before adding frosting.
7. To create frosting, simply mix together all ingredients until fluffy. Spread over cooled cookie bars. Slice and enjoy! (I placed my tray in the refrigerator for 30 minutes before slicing to help everything set together. Not necessary though.)
*You can also bake these in a baking pan if you would like thicker cookie bars. Cooking time may increase depending on how deep your pan is.
