Ingredients

Keto Gingerbread Cookies

  • 1 1/2 cups Almond Flour
  • 1 large Egg
  • 4 tbsp Butter softened
  • 1/4 cup Swerve Brown Sugar Substitute
  • 1 tsp Ground Ginger
  • 1/2 tsp Cinnamon
  • 1 pinch Cloves
  • 1 pinch Salt
  • 2 tsp Baking Powder

Cream Cheese Filling

  • 4 tbsp Butter softened
  • 2 ounces Cream Cheese softened
  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla

Instructions

  • Preheat the oven to 350 degrees.
  • Add the ingredients for the cookies to a mixing bowl, and blend until well combined.
  • Form the mixture into 16 evenly sized balls, and flatten slightly with the palm of your hands.
  • Place the cookies onto a parchment lined baking sheet, and bake for 10-15 minutes until cooked through.
  • Allow the cookies to cool to room temperature.
  • Blend together the ingredients for the filling until smooth.
  • Turn one cookie upside down, and place some of the filling on the flat surface of the cookie.
  • Add another cookie flat side down on top of the filling to form a whoopie pie.
  • Repeat steps 7 and 8 until you have made eight whoopie pies.
