But…what are whoopie pies? They are kind of like a sandwich cookie. Two soft, cake-like cookies are sandwiched together with a creamy filling.
Traditionally, they were made with chocolate shortbread cookies and a marshmallow fluff filling. Today, there are a ton of variations on this recipe.

To make low-carb whoopie pies, I made a low-carb cookie with almond flour and a cream cheese frosting. Since gingerbread cookies are so popular this time of year, I made the gluten-free cookies taste like gingerbread cookies!
The filling is especially delicious! In fact, you can use it over again as a frosting. Add some peppermint extract to the frosting and add it on top of keto hot chocolate fat bombs.

In fact, that might save you a little bit of time. I prefer to add each spice individually so that I can control how the flavors balance each other out.
I used ginger, cinnamon, and cloves. If you want the cookies to be more aromatic, add a little bit more cloves.

How To Store Whoopie Pies
Since these whoopie pies are made with a cream cheese filling, you need to keep them refrigerated. You can store the gingerbread cookies – without the filling – in an airtight container at room temperature.
The cookies will stay fresh for about a week but the cream cheese filling needs to stay refrigerated. The whoopie pies will taste the best when they are fresh.
As they sit in the refrigerator, the filling will soften the cookies, so eat them as soon as you can. Assembled and chilled cookies will stay fresh in the refrigerator for up to three days.

Ingredients:
For the cookies:
Almond flour
Large egg
Butter
Swerve brown sugar substitute
Ground ginger
Cinnamon
Pinch of cloves
Salt
Baking powder
For the filling:
4 Tbsp. Butter softened
2 oz. Cream cheese softened
⅓ C. Swerve confectioners sugar substitute
1 tsp. Vanilla
Instructions:
Preheat the oven to 350 degrees.
Add the ingredients for the cookies to a mixing bowl, and blend until well combined.
Form the mixture into 16 evenly sized balls, and flatten slightly with the palm of your hands.
Place the cookies onto a parchment lined baking sheet, and bake for 10-15 minutes until cooked through. Allow the cookies to cool to room temperature.
Blend together the ingredients for the filling until smooth.
Turn one cookie upside down, and place some of the filling on the flat surface of the cookie.
Add another cookie flat side down on top of the filling to form a whoopie pie.
Repeat steps 7 and 8 until you have made eight whoopie pies.
