Ingredients

  • 10 ounces Cauliflower Rice bag, frozen
  • 1/2 Cucumber chopped (approximately 1 cup)
  • 1/4 cup Tomato chopped
  • 1/3 cup Red Onion chopped
  • 1/4 cup Feta Cheese crumbled
  • 1 Lemon juiced
  • 2 tbsp Olive Oil
  • 1/2 tsp Dry Dill
  • 1/2 tsp Garlic Powder

Instructions

  • Prepare the cauliflower rice, per bagged instructions. Set aside.
  • Chop cucumber, tomato and red onion.
  • In a large bowl, combine rice with chopped ingredients and crumbled feta.
  • Stir in olive oil, the juice of 1 lemon, dill and garlic powder. Stir well, so all ingredients are well coated.
  • Top with a dash of salt & pepper, if desired. You can serve this warm or cold.
