I love creating new side dishes for my low-carb meals. It’s fun to break out of the ordinary repetition of steamed or oven-roasted vegetables, and this cauliflower rice is anything but ordinary!
Classic Greek Flavors & Spices
I love Greek food! This is a coastal country on the Mediterranean so it features lots of fresh herbs and spices that always make me smile. Normally, Greek food is known for having oregano, lemon, olives, feat cheese, and red onions.
Since it is a coastal country, it is known for its seafood too – especially shellfish and tuna.
I took all those classic ingredients and use the best ones in this cauliflower rice. My favorite things about this rice are the feat cheese, red onion, and tomato. The dried dill adds some zest to it too!
How To Make Greek Cauliflower Rice
Trust me – save yourself time and heat up a bag of frozen cauliflower rice. Chopping a head of cauliflower to make your own fresh rice out of it is super time-consuming (and makes a big mess).
It’s so much easier to just heat up some prepped cauliflower rice, and it isn’t any less healthy either.
Then, all you have to do is chop up the ingredients and add them to the cauliflower rice! It really is that easy.

In general, white rice doesn’t really have very many nutrients or health benefits. It’s a good source of carbohydrates, but that’s about it. Cauliflower has tons of fiber, vitamins, and nutrients.
If you are on the keto diet, you will have to watch how many carbs you eat, so you should always replace white rice with cauliflower rice.
Meal Prep Cauliflower Rice
This side dish is the best thing to add to your meal prep! It tastes just as delicious cold as it does when it is hot off the stove. Mix it up and store it in an airtight container for up to 3 days.
You can even mix in some leftover baked salmon to make it a complete meal. I’m not a fan of olives, but if you enjoy them, add a few on top as a garnish.

INGREDIENTS:
Cauliflower rice – I used frozen
Cucumber
Tomato
Red onion
Feta crumbles
Lemon
Olive oil
Dry dill
Garlic powder
Salt & pepper
INSTRUCTIONS:
1. Prepare the cauliflower rice, per bagged instructions. Set aside.
2. Chop cucumber, tomato and red onion.
3. In a large bowl, combine rice with chopped ingredients and crumbled feta.
4. Stir in olive oil, the juice of 1 lemon, dill and garlic powder. Stir well, so all ingredients are well coated.
5. Top with a dash of salt & pepper, if desired. You can serve this warm or cold.

- 10 ounces Cauliflower Rice bag, frozen
- 1/2 Cucumber chopped (approximately 1 cup)
- 1/4 cup Tomato chopped
- 1/3 cup Red Onion chopped
- 1/4 cup Feta Cheese crumbled
- 1 Lemon juiced
- 2 tbsp Olive Oil
- 1/2 tsp Dry Dill
- 1/2 tsp Garlic Powder
Instructions
