Ingredients

  • 1 English Cucumber chopped
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Green Or Black Olives
  • 1/3 cup Feta Cheese crumbled
  • 1/4 cup Red Onion chopped
  • 3 tbsp Olive Oil
  • 1 tbsp Fresh Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Oregano

Instructions

  • Add the cucumber, tomatoes, olives, red onion and feta to a bowl. Stir to combine well.
  • In a small bowl, whisk together the olive oil, lemon juice, vinegar, oregano and salt and pepper to taste.
  • Pour the mixture over the vegetables, and toss to coat well.
  • Serve immediately, or chill before serving if desired.
