If you love Greek food then this salad is perfect for you! It uses authentic Greek flavors and veggies to create the ultimate fresh Greek salad. Olives, cucumbers, lemon juice, and oregano are all ingredients that you will find in Mediterranean cuisine. 

Keto Greek Cucumber Salad

Even better is the fact that this fresh salad involves absolutely no cooking! Just chop up the ingredients and toss them with the homemade dressing and you have a filling and delicious lunch. 

Add some shredded rotisserie chicken for a complete meal without any extra effort. 

Greek Cucumber Tomato Salad 

This Greek salad is an easy way to use fresh garden vegetables. I love browsing the farmer’s market nearby and buying homegrown produce. Cucumbers, tomatoes, onion, and fresh oregano are all easy to find nearby. 

Keto Greek Cucumber Salad

Do all you can to use the freshest vegetables and ingredients possible. Fresh oregano and squeezed lemon juice have a bigger flavor than dried or jarred. 

If you are still feeling a bit hungry after eating this salad, make a quick bowl of keto Greek cauliflower rice. It has many of the same flavors and ingredients. 

Best Greek Salad Dressing 

For this salad, I combined fresh lemon juice with red wine vinegar for an unforgettable dressing. It really ties all the different flavors together and enhances the tartness of the feta cheese and red onion. 

Keto Greek Cucumber Salad

I am also a huge fan of high-protein and low-carb tzatziki sauce. It’s the best Greek dressing you can make. In fact, it would taste delicious on this salad because it has cucumber flavors, just like in this recipe. 

Fresh Cucumber and Tomato Salad 

For the best crunch and slightly-sweet flavor, I suggest using an English cucumber. Honestly, any cucumber will do. Some of them have more seeds than others, and English cucumbers chop up so nicely. 

Keto Greek Cucumber Salad

I also just sliced cherry tomatoes in half. If you don’t like how juicy the cherry tomatoes are, then use grape tomatoes instead. They have a lower water content and thicker skins. 

Cucumber Tomato and Onion Salad 

If you are going to store this salad and use it in your meal prep, then keep it in an airtight container without the dressing. Keep the dressing in a separate jar or bottle. This way the cucumbers and onions won’t soften after soaking up the vinegar and lemon juice.

Ingredients:

English cucumber 
Cherry tomatoes 
Green or black olives
Feta crumbled
Chopped red onion
Olive oil
Fresh lemon juice
Red wine vinegar
Oregano
Salt and pepper

Instructions:

Add the cucumber, tomatoes, olives, red onion and feta to a bowl. Stir to combine well.

In a small bowl, whisk together the olive oil, lemon juice, vinegar, oregano and salt and pepper to taste.

Ingredients
  

  • 1 English Cucumber chopped
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Green Or Black Olives
  • 1/3 cup Feta Cheese crumbled
  • 1/4 cup Red Onion chopped
  • 3 tbsp Olive Oil
  • 1 tbsp Fresh Lemon Juice
  • 1 tbsp Red Wine Vinegar
  • 1 tsp Oregano
