Ingredients

  • 2 1/2 pounds Beef Brisket
  • 4 tbsp Olive Oil divided
  • 2 tsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1/4 tsp Ground Thyme
  • 1 tsp Chili Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Cumin
  • 2 tsp Swerve Brown Sugar Substitute
  • 1 cup Beef Broth

Instructions

  • Place the brisket into a large mixing bowl, and season with salt and pepper to taste.
  • Drizzle 2 tbsp of the olive oil over the brisket.
  • Add the seasonings to the mixing bowl, and rub them thoroughly into both sides of the brisket.
  • Set the Instant Pot to saute, and add in the remaining olive oil.
  • Place the brisket into the heated Instant Pot, and sear evenly on all sides.
  • Turn the saute function off, and pour the beef broth into the Instant Pot.
  • Close the lid, and make sure the vent is turned to the “sealing” position.
  • Cook on manual high for 70 minutes.
  • Let it do a 20 minute natural release when the timer is done, and then carefully release the remaining steam by turning the valve to “venting."
  • Slice the brisket and serve over mashed cauliflower.
