With flavor jumping off every bite of tender meat, this keto Instant Pot beef brisket recipe will become your favorite way to cook it.
Instant Pot Brisket
Beef brisket doesn’t have to be intimidating. Sure, it is a very tough cut of beef, but if you cook it low and slow, you’ll have one of the most tender and flavorful meats you have ever tasted.
An Instant Pot is a type of pressure cooker that uses steam to cook the food within. This is why it is very important to pay close attention to how much liquid you use in each recipe. For a 2 1/2-pound brisket, you’ll need a cup of beef broth.
If you use more meat, you should add more broth. Failure to use enough broth could cause the meat to burn and it might make the Instant Pot give you a “BURN” warning.
Keto Brisket
Don’t let the name “Instant Pot” fool you. It doesn’t cook food in an Instant. In order to make the brisket fork tender, you will need to cook this for at least 70 minutes.
Remember, if you use a larger brisket than 2 1/2 pounds, you should increase the cooking time as well.
When you are counting the cooking time, remember to include the time it takes for a natural pressure release. A natural pressure release is where you allow the time to run out and the Instant Pot to depressurize naturally.
After letting it do a natural pressure release for 20 minutes, you can manually open the steam valve to let the rest of the steam out. I would give yourself 2 hours to make this brisket, from start and prep to finish and serve.

When you use an Instant Pot, all the spices and flavors in the broth are infused into the meat. Instead of tasting the herbs on top of the brisket, you’ll actually feel like the spices and the brisket are one and the same.
For this reason, I used my seven favorite spices. Feel free to adjust these spices to your liking. If you are a huge garlic fan, add more of it. If you want it to be spicier, add more chili powder. It’s a really easy recipe to adjust and change.
How To Store Brisket
This is the perfect type of meat to use over and over again in your meal prep. Shred it and add it on top of your favorite chopped salad recipe. Or, use it inside some Philly cheesesteak packets.
Store leftover brisket in an airtight container and keep it in the refrigerator for up to three days.
What To Eat With Brisket
This is the perfect main course for dinner; all you need are a few easy side dish recipes to go along with it! Add some cheesy cauliflower breadsticks to the table for a bread replacement.
This brisket creates an irresistible gravy as it cooks, so serve it over your favorite mashed cauliflower recipe.
Garlic butter zucchini and squash is another effortless side dish. It’s high in fiber and really low-carb. Instead of rolls, serve some rosemary cloud bread.
Make some low-carb green beans and bacon for another vegetable to add to the table. They go with almost anything!
