Ingredients

  • 1 1/2 pounds Chicken Thigh boneless, skinless
  • 2 tbsp Olive Oil
  • pinch Cayenne Pepper
  • 1/2 cup Soy Sauce
  • 5 tbsp Distilled White Vinegar
  • 1/2 Medium Onion Sliced
  • 2 tbsp Swerve Brown Sugar Substitute
  • 4 tsp Minced Garlic

Garnish

  • Fresh Parsley

Instructions

  • Heat the oil in the Instant Pot on the saute setting.
  • Season the chicken thighs with salt and pepper to taste as well as a dash of cayenne pepper.
  • Add the chicken to the heated oil and brown on both sides.
  • Turn the heat off, add the remaining ingredients into the Instant Pot with the chicken, and close the lid, setting it to “sealing.”
  • Place the Instant Pot to cook on manual for 10 minutes. Once complete, perform a quick release, set the Instant Pot to saute, and cook another 15 minutes before serving.
