Ingredients

  • 1/2 pound Natural Ground Italian Sausage
  • 1/2 Onion chopped
  • 1/2 Green Bell Pepper chopped
  • 2 tsp Minced Garlic
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Ricotta Cheese
  • 1/2 tsp Italian Seasoning
  • 1/4 cup Parmesan Cheese grated
  • 8 Zero carb street taco sized tortillas

Instructions

  • Add the ground sausage, onions and peppers to a skillet over medium high heat. Saute until the meat is browned completely and the vegetables are tender.
  • Stir in the garlic, and saute for another 30 seconds. Turn off the heat and let the filling cool slightly.
  • Add the meat mixture to a mixing bowl with the mozzarella, ricotta, Italian seasoning and parmesan. Stir to combine well.
  • Place a layer of filling down the center of each tortilla, and roll the tortilla closed.
  • Heat a thin layer of oil in a skillet over medium heat.
  • Toast the rollups in the skillet until browned and crispy on the outside.
