1/2pound Natural Ground Italian Sausage
1/2Onion chopped
1/2Green Bell Pepper chopped
2tspMinced Garlic
1cupMozzarella Cheese shredded
1/2cupRicotta Cheese
1/2tspItalian Seasoning
1/4cupParmesan Cheese grated
8Zero carb street taco sized tortillas
Instructions
Add the ground sausage, onions and peppers to a skillet over medium high heat. Saute until the meat is browned completely and the vegetables are tender.
Stir in the garlic, and saute for another 30 seconds. Turn off the heat and let the filling cool slightly.
Add the meat mixture to a mixing bowl with the mozzarella, ricotta, Italian seasoning and parmesan. Stir to combine well.
Place a layer of filling down the center of each tortilla, and roll the tortilla closed.
Heat a thin layer of oil in a skillet over medium heat.
Toast the rollups in the skillet until browned and crispy on the outside.
