If you deconstruct the basic parts of a pizza, you’ll realize that there are endless ways to enjoy pizza on a keto diet. And these Italian sausage tortilla roll-ups are my newest obsession.

As you can see, I kept the red pizza sauce on the outside and used it as a dipping sauce. These crispy roll-ups are filled with tons of cheese, ground Italian sausage, and your peppers.

Keto Tortilla Roll-Ups
I have two ways that I like to make keto-friendly roll-ups. I will either use a low-carb tortilla or make wraps out of baking shredded cheese.

For a filling made up of cheese, peppers, and Italian sausage, I knew I needed to use tortillas.
I love how crispy they are! First thing you’ll notice is the crunchy outside. And then all that melted cheesy goodness on the inside fills your mouth.
You can certainly use sugar-free pizza sauce as a dip, or skip it! These roll-ups taste perfect without the sauce too.
Keto Tortilla Roll-Ups
I love the savory and slightly-spicy flavor of Italian sausage. It pops with more flavor than ground beef (and a bunch more flavor than ground poultry).

You can easily turn this into a meat-lover’s roll up recipe too! Add some crumbled bacon, chopped pepperoni, and maybe some ground beef crumbles. Yum!
And if you want to make it spicier, add either diced jalapeno or habanero peppers. I used green bell peppers to give it a bit more flavor, fiber, and nutrition.
Oh, and feel free to use baby peppers or any color of bell pepper that you like.
Sausage Pizza Roll-Ups
These easy sausage pizza roll-ups are the perfect thing to add to your meal prep! Since I made them with tortillas instead of baked cheese wraps, you can store them in the refrigerator and then reheat them in a skillet or air fryer.

If you reheat them in the microwave, the tortillas will become softer, so keep that in mind.
Store leftover roll ups in an airtight food storage container. Keep them in the refrigerator for up to three days.
Sausage Tortilla Wrap
What are the best kinds of tortillas to eat on the keto diet? When you make a sausage tortilla wrap, you have freedom to use your favorite brand of tortillas.

Mission brand is really easy to find at the grocery store (and they have a bunch of flavors to choose from, too!).
The street-taco sized tortillas are the perfect size for the roll-ups. Don’t try to make them with larger tortillas – they’re too big.
Keto Italian Sausage Pizza Roll-Ups Recipe
Below are the ingredients (and step by step pictures) that you’ll need to make these keto Italian sausage pizza roll ups. Exact measurements and instructions are located in the printable recipe card, just a little bit further below.

Ingredients:
- Natural ground Italian sausage
- Onion chopped
- Green bell pepper chopped
- Minced garlic
- Mozzarella cheese shredded
- Ricotta cheese
- Italian seasoning
- Parmesan cheese grated
- Zero carb street taco sized tortillas
Instructions:
Add the ground sausage, onions and peppers to a skillet over medium high heat. Saute until the meat is browned completely and the vegetables are tender.

Stir in the garlic, and saute for another 30 seconds. Turn off the heat and let the filling cool slightly.

Add the meat mixture to a mixing bowl with the mozzarella, ricotta, Italian seasoning and parmesan. Stir to combine well

Place a layer of filling down the center of each tortilla, and roll the tortilla closed.

Heat a thin layer of oil in a skillet over medium heat.

Toast the roll ups in the skillet until browned and crispy on the outside.

- 1/2 pound Natural Ground Italian Sausage
- 1/2 Onion chopped
- 1/2 Green Bell Pepper chopped
- 2 tsp Minced Garlic
- 1 cup Mozzarella Cheese shredded
- 1/2 cup Ricotta Cheese
- 1/2 tsp Italian Seasoning
- 1/4 cup Parmesan Cheese grated
- 8 Zero carb street taco sized tortillas
Instructions
- Add the ground sausage, onions and peppers to a skillet over medium high heat. Saute until the meat is browned completely and the vegetables are tender.
- Stir in the garlic, and saute for another 30 seconds. Turn off the heat and let the filling cool slightly.
- Add the meat mixture to a mixing bowl with the mozzarella, ricotta, Italian seasoning and parmesan. Stir to combine well.
- Place a layer of filling down the center of each tortilla, and roll the tortilla closed.
- Heat a thin layer of oil in a skillet over medium heat.
- Toast the rollups in the skillet until browned and crispy on the outside.
