Ingredients

  • 3 Low-Carb Tortillas cut in half
  • 1 pound Shredded Chicken
  • 1/2 medium Onion chopped
  • 1 Red Bell Pepper chopped
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Chicken Broth
  • 1 tsp Chicken Bouillon Powder or 1 cube
  • 1 can RoTel Tomatoes drained
  • 1/4 cup Chopped Green Onions plus additional for garnish
  • 1 1/2 cups Shredded Colby Jack Cheese
  • 2 tbsp Butter

Instructions

  • Preheat oven to 350 degrees.
  • Layer the tortillas pieces in the bottom of a well greased 9x13 baking dish.
  • Add the butter to a skillet over medium heat to melt.
  • Place the peppers and onions into the skillet, and saute until becoming tender.
  • Pour the heavy whipping cream and chicken broth into the skillet, and simmer until thickened.
  • Add in the bouillon powder, salt and pepper to taste, as well as the rotel. Stir to combine.
  • Mix in the chicken and green onions.
  • Layer the mixture over the tortillas in the baking dish, and sprinkle with the cheese.
  • Bake for 25-30 minutes.
  • Let rest 10 minutes before serving.
