Have you heard of King Ranch chicken? Some people think it came from the King Ranch which is the biggest ranch in the United States. It is in Texas and larger than the entire state of Rhode Island. As cool as that place is, no one there can confirm that this recipe even came from them!
They make amazing beef but aren’t known for chicken. No matter where this recipe came from, it has a definite southwestern flair! Most types of King Ranch chicken casseroles are creamy with tomatoes, peppers, and chicken with corn tortillas.
I love King Ranch chicken so much that I decided to make a low-carb version and it turned out to be a perfect copycat!
King Ranch Chicken Casserole Keto
To keep this recipe keto, I used heavy whipping cream to make it creamy instead of canned cream soups. Honestly, I prefer it with heavy whipping cream – it’s richer and incredibly tasty!
The key part of this recipe is the base layer which is made of low-carb tortillas. To save yourself time, I suggest just buying some low-carb tortillas that are already made. If you prefer to make them yourself, I have a recipe for them in this keto Mexican pizza recipe.
King Ranch Chicken Casserole
Another time-saver is to use rotisserie chicken instead of cutting up and cooking raw chicken. Just shred the cooked chicken and add it to the casserole.
Since this recipe has southwestern flavors, serve some keto chili lime tortilla chips on the side.

Almost all King Ranch chicken recipes have Ro-Tel tomatoes in them. I kept this classic ingredient the same.

Keep in mind that the longer it sits in the refrigerator, the more it will solidify and the softer the tortillas will become. I suggest eating it the next day for the freshest taste.

Ingredients:
Low carb tortillas
Shredded chicken
Medium onion
Red bell pepper
Heavy whipping cream
Chicken broth
Chicken bouillon powder
Rotel drained
Salt and pepper
Green onions
Colby jack cheese
Butter
Instructions:
1. Preheat oven to 350 degrees.
2. Layer the tortillas pieces in the bottom of a well greased 9×13 baking dish.
2. Add the butter to a skillet over medium heat to melt.
3. Place the peppers and onions into the skillet, and saute until becoming tender.
4. Pour the heavy whipping cream and chicken broth into the skillet, and simmer until thickened.
5. Add in the bouillon powder, salt and pepper to taste, as well as the rotel. Stir to combine.
6. Mix in the chicken and green onions.
7. Layer the mixture over the tortillas in the baking dish, and sprinkle with the cheese.
8. Bake for 25-30 minutes.
9. Let rest 10 minutes before serving.

- 3 Low-Carb Tortillas cut in half
- 1 pound Shredded Chicken
- 1/2 medium Onion chopped
- 1 Red Bell Pepper chopped
- 1 cup Heavy Whipping Cream
- 1/2 cup Chicken Broth
- 1 tsp Chicken Bouillon Powder or 1 cube
- 1 can RoTel Tomatoes drained
- 1/4 cup Chopped Green Onions plus additional for garnish
- 1 1/2 cups Shredded Colby Jack Cheese
- 2 tbsp Butter
Instructions
