2Boneless Skinless Chicken Breasts cut in half lengthwise
Juice from 1 lemon
2tspMinced Garlic
3tbspOlive Oil
1tbspFresh Thyme
1tbspFresh Rosemary
1tbspFresh Chives
1tbspFresh Parsley
Salad
6cupsMixed Salad Greens
1cupMini Cherry Tomatoes
1/2cupCucumber sliced and halved
1/4Red Onionsliced thinly
1Avocado sliced
Grilled Chicken sliced
Lemon Herb Dressing
Juice from 1 lemon
2tbspOlive Oil
1tspDijon Mustard
1tspMinced Garlic
1/2tspItalian Seasoning
Instructions
Add the juice from 1 lemon, 2 tsp minced garlic, 3 Tbsp olive oil, the thyme, rosemary, chives, parsley and salt and pepper to taste to a mixing bowl, and whisk to combine.
Toss the chicken in the marinade, and marinate in the fridge for at least 2 hours.
Heat the grill to medium high, and grill the chicken until completely cooked through.
Place the salad greens into a large serving bowl.
Top with the cucumber, red onion, tomatoes, avocado and sliced chicken.
Whisk together the dressing ingredients, and drizzle over the salad before serving.
