Ingredients

Marinated Chicken

  • 2 Boneless Skinless Chicken Breasts cut in half lengthwise
  • Juice from 1 lemon
  • 2 tsp Minced Garlic
  • 3 tbsp Olive Oil
  • 1 tbsp Fresh Thyme
  • 1 tbsp Fresh Rosemary
  • 1 tbsp Fresh Chives
  • 1 tbsp Fresh Parsley

Salad

  • 6 cups Mixed Salad Greens
  • 1 cup Mini Cherry Tomatoes
  • 1/2 cup Cucumber sliced and halved
  • 1/4 Red Onion sliced thinly
  • 1 Avocado sliced
  • Grilled Chicken sliced

Lemon Herb Dressing

  • Juice from 1 lemon
  • 2 tbsp Olive Oil
  • 1 tsp Dijon Mustard
  • 1 tsp Minced Garlic
  • 1/2 tsp Italian Seasoning

Instructions

  • Add the juice from 1 lemon, 2 tsp minced garlic, 3 Tbsp olive oil, the thyme, rosemary, chives, parsley and salt and pepper to taste to a mixing bowl, and whisk to combine.
  • Toss the chicken in the marinade, and marinate in the fridge for at least 2 hours.
  • Heat the grill to medium high, and grill the chicken until completely cooked through.
  • Place the salad greens into a large serving bowl.
  • Top with the cucumber, red onion, tomatoes, avocado and sliced chicken.
  • Whisk together the dressing ingredients, and drizzle over the salad before serving.
