My balsamic strawberry chicken salad inspired this easy salad. I have plenty of creamy, mayo-based chicken salad recipes, so I’m adding more traditional salads to my recipe collection.
Both the balsamic chicken salad and this lemon herb salad are made with marinated chicken that’s absolutely bursting with flavor!
This lemon herb chicken takes a boring bed of lettuce and turns it into something you’ll dig into with your fork. The secret is the dressing and all the toppings.
If you see something on the salad you don’t like, then leave it out. This salad is completely customizable, too.
Easy Chicken Salad
There are three parts to this salad – the marinated chicken, the salad, and the dressing. And each part is easy to change to match your tastes.
Save this recipe even if you just want to keep the marinade ingredients. The lemon garlic and herb marinade infuses flavor into every bite of the chicken breasts.
I used only fresh herbs in the marinade because they are so much more aromatic.
Even though I used chicken breasts, you can make this with chicken thighs, too. Just remove the tendon parts and cut them into equal parts.
Trust me, use fresh lemons for the marinade and the dressing. It’s sweeter and has a brighter flavor than the sour jarred lemon juice. Optionally, make the salad dressing spicier by using spicy brown mustard instead of Dijon mustard.
Keto Chopped Chicken Salad
There are six grams net carbs in each serving of this hearty salad. Most of the carbs are coming from the variety of different toppings. So, to minimize the carbs, use fewer toppings.
Avocado is a source of healthy fats and will help you feel full from this nutritious salad. I suggest leaving it on. If you need to remove any toppings, start with tomatoes. They’re higher in carbs.
What To Eat With Chicken Salad
Since this salad is a bit higher in carbs, I suggest eating it with a low-carb soup.

Salad Meal Prep
Lemon herb chicken salad works for your meal prep. My favorite way to meal prep green salads is to use the mason jar method.
Place the lettuce in the bottom of the jar. Add toppings. Put the chicken on top. Then, add the dressing on top of all of it. Store it in the refrigerator for up to three days.
Alternatively, you could also store the dressing in its own container.

Ingredients:
For the marinade:
- Boneless skinless chicken breasts cut in half lengthwise
- Juice from 1 lemon
- Minced garlic
- Olive oil
- Fresh thyme
- Fresh rosemary
- Fresh chives
- Fresh parsley
- Salt and pepper to taste
Salad:
- Mixed salad greens
- Mini cherry tomatoes
- Cucumber sliced and then halved
- Red onion thinly sliced
- Avocado sliced
- Prepared grilled chicken
Dressing:
- Juice from 1 lemon
- Olive oil
- Dijon mustard
- Minced garlic
- Italian seasoning
- Salt and pepper to taste
Directions
Add the juice from 1 lemon, 2 tsp minced garlic, 3 Tbsp olive oil, the thyme, rosemary, chives, parsley and salt and pepper to taste to a mixing bowl, and whisk to combine.
Toss the chicken in the marinade, and marinate in the fridge for at least 2 hours. Heat the grill to medium high, and grill the chicken until completely cooked through.
Place the salad greens into a large serving bowl. Top with the cucumber, red onion, tomatoes, avocado and sliced chicken.
Whisk together the dressing ingredients, and drizzle over the salad before serving.

Marinated Chicken
- 2 Boneless Skinless Chicken Breasts cut in half lengthwise

- 1/2 tsp Italian Seasoning
