Preheat the oven to 375 degrees.
In a skillet over medium high heat, add the oil.
Season the chicken with salt and pepper to taste, and place into the heated skillet.
Sear on both sides evenly for 2-3 minutes.
Remove the chicken, and reduce the heat to medium.
Add in the garlic, and saute 30 seconds.
Pour in the chicken broth and heavy whipping cream.
Sprinkle in the thyme, red pepper flakes and more salt and pepper to taste if desired.
Mix in the parmesan cheese and tomatoes until thickened.
Add the chicken back to the skillet, and coat in the sauce.
Place the skillet into the oven for 15 minutes, or until the chicken is cooked through.
Garnish with chopped fresh basil, and serve over palmini noodles if desired.
