This recipe has a name that grabs your attention. When I tried to find out why it is called marry me chicken, most recipe creators either think it’s because the ingredients marry really well together or it’s so tasty that it warrants a marriage proposal to the chef.
Maybe it’s both!
Most recipes for marry me chicken include sun dried tomatoes in a creamy sauce. I stayed as close to the original recipe as possible, while also keeping the carbs low enough to fit in with a keto diet.
It is usually served over angel hair pasta. To keep it low-carb, I used Palmini noodles. You can use zucchini noodles or spaghetti squash instead or just skip the noodles entirely.
Keto Marry Me Chicken
When you make marry me chicken, I suggest either trimming chicken breast into thin cutlets or just using chicken breast tenders. You will be cooking the chicken in a skillet and the thinner the chicken is, the quicker it will cook.
Use an instant read food thermometer to check the internal temperature of the chicken. This is how you will know if it is fully cooked. Chicken must be cooked until the inside reaches at least 165F.
Easy Marry Me Chicken Recipe
This is the perfect recipe to make for your weekly meal prep. If you use palmini noodles it will taste exceptional when you warm it back up. Just keep it in an airtight container in the refrigerator for up to 3 days.
I love my cast iron skillet and if you don’t have one yet, get one. Either a cast iron skillet or stainless steel one or some other kind of skillet that is safe to put in the oven.
I love being able to make something on the stove and then transfer it to the oven without having to make a casserole dish dirty.
What To Eat With Chicken
This skillet chicken meal has an Italian flair thanks to the sundried tomatoes, so it’s best to serve some time of Italian salad with it. I think my copycat Olive Garden salad is the perfect side dish.
Or keep things simple and just add your favorite steamed vegetables to the side. Keto loaded ranch cauliflower is a really filling side dish that has a lot of similar flavors to this chicken. This Greek cauliflower rice would taste amazing with it too! I love all the different things I mixed into the cauliflower rice.
How To Store Cooked Chicken
If you want to make the chicken ahead of time, you can sear it in a skillet and cook it completely. Then store it in an airtight container in the refrigerator for up to three days.
The reason you should eat chicken fresh is because it tastes so much better right after it is cooked. It will dry out as it stays chilled in the refrigerator.

Ingredients:
Chicken breast tenderloins
Olive oil
Minced Garlic
Ground thyme
Red pepper flakes
Salt and pepper
Chicken broth
Heavy whipping cream
Sundried tomatoes
Parmesan cheese grated
Basil for garnish
Palmini noodles for serving (optional)
Instructions:
Preheat the oven to 375 degrees.
In a skillet over medium high heat, add the oil.
Season the chicken with salt and pepper to taste, and place into the heated skillet. Sear on both sides evenly for 2-3 minutes.
Remove the chicken, and reduce the heat to medium.
Add in the garlic, and saute 30 seconds.
Pour in the chicken broth and heavy whipping cream.Sprinkle in the thyme, red pepper flakes and more salt and pepper to taste if desired.
Mix in the parmesan cheese and tomatoes until thickened.
Add the chicken back to the skillet, and coat in the sauce.
Place the skillet into the oven for 15 minutes, or until the chicken is cooked through.
Garnish with chopped fresh basil, and serve over palmini noodles if desired.
