1/4cupMatchstick Carrots
1/4cupChopped Cilantro optional
1/4cupFinely chopped Red Onion
1Jalapenodeseeded and finely chopped
1/2cupMayonnaise
1/2cupSour Cream
2tspChili Powder
1tspCumin
1tspPaprika
1/2tspOregano
Juice from 1 lime
Instructions
In a mixing bowl, stir together the mayonnaise, sour cream, chili powder, cumin, paprika, oregano, lime juice and salt and pepper to taste.
Add the coleslaw mix, matchstick carrots, cilantro, red onion and jalapeno to the mixing bowl, and stir to combine well.
Serve immediately, or chill before serving if desired.
