Mexican Coleslaw
Crispy shredded cabbage in a tangy dressing. It goes with almost anything – and this time, we added jalapenos, chili powder, and a few other ingredients to wake up our taste buds.
The result is a salad that you can eat anytime, with anything. Taco Tuesday, rushed lunch, or cookouts, this slaw is ready for it all!
Just like so many of my recipes, I kept it simple while also making it taste incredible! All of the ingredients are easy to find at the grocery store (and you might already have most of them!).
Trust me, use as many fresh ingredients as you can. They will mingle together to create the most drool-inducing aroma that you’ll taste the bowl before serving it on your plate.
Keto Mexican Coleslaw
I started out with a basic coleslaw – cabbage, mayonnaise, and sour cream – and then added my favorite Mexican spices and vegetables. I used jalapenos but if you can handle the heat, add some poblano peppers to it too.
If you think the red onion is too overpowering, either replace it with yellow onion or soak the red onion in water first. Soaking red onion in cold water helps rinse off some of the juices that make it taste so strong.
I’m a huge fan of fresh cilantro, but some people think it tastes like soap. If you don’t like how fresh cilantro tastes, then leave it out.
You can also replace it with its cousin, fresh parsley. Flat leaf parsley will give the slaw a fantastic flavor.
Keto Mexican Side
This is a meatless side dish that tastes incredible on top of burgers, tacos, or as a side for enchiladas. Add a spoonful on top of some keto tostadas and it will make it really taste amazing!
In fact, if you’re getting a little tired of keto Mexican cauliflower rice as your go-to side dish, start using this instead! You can also make some incredible keto Mexican lettuce wraps with it, too!
Turn this side dish into your main lunch buy adding some shredded chicken to the slaw and then put a spoonful on a piece of large lettuce. The crispy cabbage and tender chicken will taste amazing with the crispy lettuce wraps.

How To Store Coleslaw
Eat this slaw throughout the week! Put leftovers in an airtight container and keep it in the refrigerator for up to three days.
As it sets in the fridge, the dressing will soften the cabbage. So, I suggest eating it as soon as possible.
I never recommend freezing coleslaw or any other type of salad. It changes the texture too much.

Directions
