Kids love with these fun Halloween tacos! Keto eyeball tacos are made with sour cream and olives to make a silly face.

Ingredients

  • 4 Zero Carb Tortillas
  • 1 pound Ground Beef
  • 2 tsp Taco Seasoning
  • 2 tbsp Water
  • 1 cup Shredded Lettuce
  • 1 Roma Tomato chopped
  • 1 cup Colby Jack Cheese shredded
  • 2 tbsp Sour Cream
  • 4 Black Olives cut in half

Instructions

  • Heat the oven to 300 degrees.
  • Lay the tortillas over the rungs of the oven rack or a baking rack.
  • Bake for about 6-8 minutes, or until lightly browned and crispy. Remove and let cool.
  • Heat the ground beef in a skillet over medium high heat until cooked through.
  • Reduce the heat to medium low, and remove any excess grease.
  • Stir in the taco seasoning and water, and simmer until the liquid is mostly absorbed.
  • Fill the taco shells with the taco meat.
  • Top with the shredded lettuce, tomatoes and cheese.
  • Use a small spoon to place two dollops of sour cream side by side on the top of each taco.
  • Place half of an olive on top of each dollop of sour cream and serve.
