Keto Tacos
I’m a huge fan of tacos! I’ve made Mississippi pot roast tacos, salami tacos, and even pumpkin pie tacos.
So I had to make some keto tacos for a Halloween party! It’s the best idea because everyone can make their taco exactly how they want it.
Just set up the taco bar with as many toppings as you can think of and let everyone make their own.
What makes these tacos extra perfect for Halloween? The sour cream and olive eyeballs!
They add a silly and spooky face to the meal, making dinnertime fun for everyone.
Monster Tacos
My monster tacos are really easy to customize. I used sour cream and black olives for the eyes but you can change it up.
If you want to make them look really weird, then layer a bit of green guacamole on top of the sour cream to give the eyeballs some oozy green colors. If you want blue eyes, use blueberries.
And if you want to make the tacos smile, then use the squeezable taco sauce to add a red smile.
Eyeball Tacos
If you don’t like how sour cream tastes, you can make the eyeballs out of fresh mozzarella cheese. Slice a round piece of mozzarella cheese and add the olive on top.
It looks the exact same as the sour cream. I also saw some tacos where someone sliced jalapenos and used them as green eyes instead of the black olives.
Other people sliced Roma tomatoes and use them as red eyeballs. Be creative and have fun with it!
What To Eat With Tacos
Serve your favorite Tex Mex recipes with these delicious and healthy tacos. Start out with some keto Mexican street cauliflower.
They are roasted to perfection and everyone loves them or go with a classic recipe and make keto Mexican cauliflower rice. Or add a cold bold of keto aguachile to the table.
Then, for dessert, serve some crispy keto churros are the perfect treat.
Keto Taco Shells
If you can find keto-friendy hard taco shells, then buy them. Old El Paso sells some, but a lot of grain-free taco shells are actually high in carbs, so always read the nutrition facts before you buy them.
That’s why I prefer to make my own. I bake zero carb tortillas over the rungs of a baking rack and they become crispy.
It’s really easy and only takes about 8 minutes for them to get beautifully crispy.
Keto Monster Eyeball Tacos Recipe

Ingredients
- Zero Carb Tortillas
- Ground Beef
- Taco Seasoning
- Water
- Shredded Lettuce
- Roma Tomato
- Colby Jack Cheese
- Sour Cream
- Black Olives
Directions
Heat the oven to 300 degrees. Lay the tortillas over the rungs of the oven rack or a baking rack.
Bake for about 6-8 minutes, or until lightly browned and crispy. Remove and let cool.
Heat the ground beef in a skillet over medium high heat until cooked through. Reduce the heat to medium low, and remove any excess grease.
Stir in the taco seasoning and water, and simmer until the liquid is mostly absorbed. Fill the taco shells with the taco meat.
Top with the shredded lettuce, tomatoes and cheese. Use a small spoon to place two dollops of sour cream side by side on the top of each taco.
Place half of an olive on top of each dollop of sour cream and serve.

- 1 pound Ground Beef
- 2 tsp Taco Seasoning
- 2 tbsp Water
- 1 cup Shredded Lettuce
- 1 Roma Tomato chopped
- 1 cup Colby Jack Cheese shredded
- 2 tbsp Sour Cream
- 4 Black Olives cut in half
Instructions
