Keto Mushroom, Spinach and Cheese Chicken

This dinner tastes as good as it looks, and it's easier to cook than you might think. Keto mushroom spinach chicken is both tangy and earthy.

Ingredients

  • 2 large boneless skinless chicken breasts cut in half lenghtwise
  • 2 tbsp Olive Oil
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 3 tbsp Butter
  • 1/2 Onion chopped
  • 6 ounces Sliced Mushrooms
  • 4 cups Raw Spinach
  • 2 tsp Minced Garlic
  • 4 slices Provolone Cheese

Instructions

  1. Heat the olive oil in a skillet over medium high heat in the skillet.

  2. Season the chicken with the onion powder, garlic powder, Italian seasoning and salt and pepper to taste.

  3. Sear the chicken in the skillet until completely cooked through. Remove and set aside.

  4. Reduce the heat to medium, and melt the butter in the skillet.

  5. Stir in the onions, and saute for 2 minutes.

  6. Mix in the garlic and mushrooms, and saute for another 4 minutes.

  7. Add in the spinach, and cook until wilted.

  8. Return the chicken to the skillet and top with the provolone cheese.

  9. Turn off the heat, cover the skillet with a lid, and serve once the cheese has melted.
