2largeboneless skinless chicken breastscut in half lenghtwise
2tbspOlive Oil
1tspOnion Powder
1tspGarlic Powder
1tspItalian Seasoning
Salt and Pepper to taste
3tbspButter
1/2Onion chopped
6ounces Sliced Mushrooms
4cupsRaw Spinach
2tspMinced Garlic
4slices Provolone Cheese
Instructions
Heat the olive oil in a skillet over medium high heat in the skillet.
Season the chicken with the onion powder, garlic powder, Italian seasoning and salt and pepper to taste.
Sear the chicken in the skillet until completely cooked through. Remove and set aside.
Reduce the heat to medium, and melt the butter in the skillet.
Stir in the onions, and saute for 2 minutes.
Mix in the garlic and mushrooms, and saute for another 4 minutes.
Add in the spinach, and cook until wilted.
Return the chicken to the skillet and top with the provolone cheese.
Turn off the heat, cover the skillet with a lid, and serve once the cheese has melted.
