Spinach Cheese Chicken
I used chicken breasts to make this dish, because it has the perfect texture with the sauteed mushrooms. But chicken thighs or even chicken tenders will also work.
If you use chicken thighs, please trim fat and tendons off. And if you use chicken tenders, then watch them closely because they will cook quicker.
I used provolone cheese on top of the chicken breasts. I love the slightly-tangy flavor that it has.
Plus, it’s mild so the mushrooms and spinach will really stand out. You could use fresh mozzarella instead.
It will have a slightly sweet flavor that will enhance the spinach.
Keto Spinach Chicken
It’s always a good idea to cook with fresh spinach, not frozen or canned. The fresh spinach has a stronger flavor and it will have a better texture as it wilts while it’s cooking.
I seasoned this recipe with a familiar blend of garlic and onion powders and Italian seasoning. But if you want to give it a bit of heat, sprinkle in some red pepper flakes, too!

Ingredients:
- Boneless skinless chicken breasts cut in half lengthwise
- Olive oil
- Onion powder
- Garlic powder
- Italian seasoning
- Salt and pepper to taste
- Butter
- Onion chopped
- Sliced mushrooms
- Raw spinach
- Minced garlic
- Provolone cheese
Instructions:
Heat the olive oil in a skillet over medium high heat in the skillet. Season the chicken with the onion powder, garlic powder, Italian seasoning and salt and pepper to taste.
Sear the chicken in the skillet until completely cooked through. Remove and set aside.
Reduce the heat to medium, and melt the butter in the skillet. Stir in the onions, and saute for 2 minutes.
Mix in the garlic and mushrooms, and saute for another 4 minutes. Add in the spinach, and cook until wilted.
Return the chicken to the skillet and top with the provolone cheese.
Turn off the heat, cover the skillet with a lid, and serve once the cheese has melted.

- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 3 tbsp Butter
- 1/2 Onion chopped
- 6 ounces Sliced Mushrooms
- 4 cups Raw Spinach
- 2 tsp Minced Garlic
- 4 slices Provolone Cheese
